It's July again and for each day of the month, expect a recipe for something delicious. It's a great time to spend with family and friends and what better than food to ensure good times. Enjoy!
Saute zucchini, summer squash and scallions in olive oil until tender. Toss with cooked orzo, baby spinach, parsley, dill, crumbled goat cheese, salt and pepper.
Cut the kernals off of a couple of ears of corn, saute in olive oil with yellow squash slices.
Toss with yellow grape tomatoes, basil, salt and pepper.
Variations: add or sub zucchini and red grape tomatoes for a more colorful alternative!!
Toss julienned jicama and mango with thin sliced red onion, radish and cilantro. Add salt, pepper and cumin.
Drizzle with olive oil and lime juice
